About knives
Im currently working with 1084,1095 & 15N20 high carbon steel, here’s what you should do to take proper care of your new knife. I recommend to wash it by hand and dry it right away, so no soaking in a sink or dish washer. Wash and dry it straight away. The blade will change color over time with contact with different acidic aliments, this is normal, there is nothing unhygienic about it. You can always polish it back as you like. You should apply a light coating of oil periodically, olive, vegetable, canola or sunflower oil is fine. Keep your knife sharp, if used daily you should sharp your knife every month. The amount you will have to sharpen your knife depends on how often you use it as well as what kind of cutting board you are using (use wood or plastic cutting board only please).
